When I give tomato plants to kids, I always give them cherry tomatoes. They grow and grow, produce a ton of fruit and don’t have many problems.
And of all the cherry tomatoes I have grown–Sweet Chelsea is the best. The fruit is big, the plants, healthy, and trouble-free. The leaves are even greener than my other tomato plants. And Sweet Chelsea plants grow and grow–giving me a bowl full of big- flavor tomatoes every 2 or three days. 
That’s a lot of tomatoes. But I can use them all. I love to slow roast these lovely tomatoes and enjoy them all year round.
Cherry tomatoes are good candidates for roasting. They have thin skins and not much water inside. Here’s how I cook my Sweet Chelsea tomatoes and turn them into my favorite Summer Tomato Jam.
- Preheat oven to 325 degrees
- Wash tomatoes and drain them dry on a kitchen towel
- Cut each tomato in half. Toss with olive oil, salt, pepper, 1 tsp sugar
- Cover a cookie sheet with foil, then spray with cooking spray
- Place tomato halves cut side up and roast until cooked but not crispy=about 1 hour and 40 minutes.
- Cool and cover with olive oil (and spices if you like. Oregano is nice.) then refrigerate or freeze for later.
I use these in pasta, on pizza or as topping for crackers and toast. The flavor is great. People rave.

There’s really no recipe. I roast the tomatoes, cover in olive oil with some chopped garlic and herbs or spices.
My favorite thing to cover them with is the spiced oil that marrinated mozzeralla comes in. Use the little balls of marrinated chesse on pizza or in pasta. Dump the leftover oil on your roasted cherry tomatoes. Test for seasoning and you are done.
Freeze or put in the frig.
To serve, bring to room temp, spread on small toasted slices of good bread as a starter or with drinks. People will think you worked really hard and all you did buy a good product and use the leftovers.
Another good thing to put in them, Polli Spicy Pepper and Garlic. I’d put about a tsp in a cup of roasted tomatoes and top off with plain olive oil.
The name “Tomato jam” makes it sound hard–but that’s a little marketing on my part. I figured if you ordered it at the Ritz in Atlanta or someplace equally upscale, they would give it a fancy name.
And it is good enough for the Ritz. Packed with sunny tomato flavor.
My friends Ivy and Megan also grow big cherry tomatoes so they can pack their freezer with cherry tomato jam. I’ll ask them to weigh in on the process. But just remember–if you don’t burn the tomatoes, it’s hard to go wrong. Even plain oil would be delicous…esp. in winter time when all tomatoes taste blah.

Sweet Chelsea was my favorite tomato for many, man years. Then I tasted Sungold (UNBELIEVABLE). My problem now is where to get seeds for Sweet Chelsea. none of the major seed carriers seem to carry them.

Good News! Tomatoe Grower supply company is offering Sweet Chelsea again this year. Go to http://www.tomatogrowers.com–just don’t order all of them. Last year I ordered two packs of seed. This spring, I’m going up to 3 since all my friends can’t get enough of these wonderful large cherry tomatoes.
Thanks for the sungold tip. I’ll put a pack on my list also. Is it as trouble free as sweet Chelsea? C
